Most of my friends believe that I am a grandma at heart- I favor early bedtimes, enjoy pastimes like needlepoint and baking, and my preferred cocktail always includes gin. I don't take much offense to this because grammies seem to have it all figured out.
Back on subject- one of my favorite gin beverages is this Cucumber Mint Cooler I got from Minimalist Baker. Its mind blowingly refreshing and has that nice citrus tang that always makes for a great drink. Similar to a gin and tonic but with a summery kick (does anything sound better??)! Plus its healthy because it has cucumbers. Its the perfect drink for these warmer months, especially after a day of lounging on the beach in the hot sun. Its also ridiculously easy to make which is always a plus. Scroll down for the recipe.
- 1.5 oz gin (or 3 Tbsp)
- 4-6 cucumber slices
- 1/4 lime, sliced
- 4 oz tonic water
- 6 mint leaves
- 1 Tbsp sugar (optional)
- Add mint, lime, gin, sugar (if using) to shaker and muddle.
- Add cucumber slices to shaker and shake vigorously.
- Pour mixture over glass filled with ice and top with tonic water.
- Stir, let set for a few minutes for the flavors to enhance and enjoy.
Then take those babies out to the porch and sip slooowly!
